A Little History:
History of Gol Gappay dates back to the Mughal period in India. The snack was so popular amongst the royalty and common people as it provided some respite from summer heat during that time. In the Aurangzeb (1660 – 1707) era Gol Guppy was invented by a street vendor named Ghulam Hasaan Khada. Khadas were street vendors who used to sell their snacks from streets across India to earn livelihood. One fine day on a hot summer, Ghulam was going to market to purchase different types of cereals like wheat but due to heavy summer heat he hesitated. He thought to make something tasty in less time and with less amount of ingredients as people would not have time to eat heavy food on that day.
Also known as poories, poories are small fried Indian snacks made from flour and water. They are made by rolling out dough into thin rotis and then cutting them up into diamond shapes before frying them in oil until they turn a crisp golden brown. This can be done by hand or rolled out in a machine called the cutta (rhymes with butter).
Ingredients
1 For the dough, mix all purpose flour, baking powder, gur and oil in a bowl.
2.Knead the dough using water.
3.Apply little oil on your palms and spread the dough.
4.Cut it into half and make two balls.
5.Then roll out both balls into rotis. Do not roll it out too thin or very thick but medium thickness is perfect.
6.Deep-fry in oil both the rolled out rotis till they turn golden brown.
7.Cut them with a scissors while they are still hot. You can cut them like diamonds or square shapes or round shapes of your choice. You will see the gole gapaie crackling while cutting, that’s how they got the name Gole Gappay (cracker) or Gol Gappe (crackers).
For filling:
8.In a plate, put some chana chaat masala powder on gole gapaie. Then put 1/2 tablespoon chaat masala powder, green chutney, tamarind chutney and yogurt over it.
For Taste Water:
Imili 1 pack mixed in 2 cup of water then chat masla,salt, black pepper, white pepper,black salt mixed well altogether.
9.Put grated carrot, cucumber and onions on top of it.
Take it and enjoy most mouth watering dish
